Description
A dark, slow-pouring honey gathered from the sweet chestnut forests that crown the upper ridges of the Greek mountains. Notes of warm wood, dark molasses and a long, almost smoky finish. Bottled in heavy hand-pressed glass, sealed in wax, kept untreated. Single meadow, cold extracted, numbered · 384.

First

"Warm resin, sun on stone."

An immediate breath of dark wood and forest floor, the smell of the mountain itself in late summer, when the chestnut canopy is heavy with bloom.

Body

The texture takes hold next, a viscosity that pours like a held breath. Wildflower and a clean, gentle sweetness held in the centre of the tongue.

The Origin

One meadow, one season.

The 2025 harvest comes from a single, south-facing chestnut grove at 950 metres in the Greek mountains, where the trees bloom in a narrow window each late summer.

Three hundred and eighty-four jars were drawn from this season. Every one numbered by hand, sealed with black wax, and kept exactly as it left the comb.
