The Tasting

What you taste, slowly.

I, First

"Warm resin, sun on stone."

An immediate breath of dark wood and forest floor, the smell of the mountain itself in late summer, when the chestnut canopy is heavy with bloom.

II, Body

"Soft amber, slow honey."

The texture takes hold next, a viscosity that pours like a held breath. Wildflower and a clean, gentle sweetness held in the centre of the tongue.

III, Finish

"Mineral, long, golden."

A slow descent into stone and salt. Subtle, almost dry. The kind of finish that lingers in the room long after the spoon has been set down.

The Origin

One meadow, one season.

The 2025 harvest comes from a single, south-facing chestnut grove at 950 metres on the slopes of Mount Pelion, where the trees bloom in a narrow window each late summer.

Three hundred and eighty-four jars were drawn from this season. Every one numbered by hand, sealed with black wax, and kept exactly as it left the comb.

A taste that lingers in the room

Resinous and dark, with a finish that arrived twenty minutes after the spoon was gone. The packaging is quietly perfect, the wax seal is a beautiful touch. Already ordered the Pine & Heather edition as a gift.

    Worth the wait

I waited two months for this edition to reopen. Worth every day. The chestnut notes are deep and woody, almost wine-like. Pairs beautifully with aged manouri and a glass of mountain tea.

    Beautifully made

Honey of remarkable clarity. The hand-pressed jar is heavier than expected and feels considered. Delivery to Amsterdam took four working days, just as promised. Will order again for the festive season.
