A dark, slow-pouring honey gathered from the sweet chestnut forests that crown the upper ridges of Mount Pelion. Notes of warm wood, dark molasses and a long, almost smoky finish. Bottled in heavy hand-pressed glass, sealed in wax, kept untreated.

An immediate breath of dark wood and forest floor, the smell of the mountain itself in late summer, when the chestnut canopy is heavy with bloom.
II, Body
"Soft amber, slow honey."
The texture takes hold next, a viscosity that pours like a held breath. Wildflower and a clean, gentle sweetness held in the centre of the tongue.
III, Finish
"Mineral, long, golden."
A slow descent into stone and salt. Subtle, almost dry. The kind of finish that lingers in the room long after the spoon has been set down.
