The Tasting

What you taste, slowly.

Nose

"Green almond, cut grass."

A bright, grassy lift the moment it leaves the bottle, green almond, tomato leaf and the smell of the grove at harvest, when the olives are still half-green on the branch.

Palate

"Round, herbal, alive."

Smooth across the tongue with a herbal centre, artichoke, fresh herbs and a faint sweetness of ripe fruit. Full-bodied without ever turning heavy.

Finish

"A clean, peppery bite."

It finishes with the pepper of fresh polyphenols, the catch at the back of the throat that tells you the oil is young, raw and full of life.

The Origin

One estate, one pressing.

The 2025 oil comes from a single grove of Koroneiki and Athinolia trees terraced at 400 metres up in the Greek mountains, hand-picked early while the fruit is still turning from green to violet.

The olives are milled within hours of picking and pressed cold, never above 27°C, so nothing of the fresh fruit is lost. Unfiltered, sealed in dark glass, and shipped exactly as it left the mill.
