I, Nose

A bright, grassy lift the moment it leaves the bottle, green almond, tomato leaf and the smell of the grove at harvest, when the olives are still half-green on the branch.
II, Palate
"Round, herbal, alive."
Smooth across the tongue with a herbal centre, artichoke, fresh herbs and a faint sweetness of ripe fruit. Full-bodied without ever turning heavy.
III, Finish
"A clean, peppery bite."
It finishes with the pepper of fresh polyphenols, the catch at the back of the throat that tells you the oil is young, raw and full of life.
